But fear not, because with this dairy-free pancake recipe, you can still enjoy fluffy, delicious pancakes without any dairy products.Ingredients
The ingredients you will need for this recipe are:- 1 1/2 cups of all-purpose flour
- 1 tablespoon of baking powder
- 1 tablespoon of sugar
- 1/4 teaspoon of salt
- 1 1/4 cups of almond milk (or any other non-dairy milk)
- 1 egg (or 1 flax egg for a vegan option)
- 2 tablespoons of vegetable oil
Instructions
1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. 2. In a separate bowl, whisk together the almond milk, egg, and vegetable oil. 3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can result in tough pancakes. 4. Heat a non-stick skillet or griddle over medium-high heat. 5. Using a 1/4 cup measuring cup, scoop the pancake batter onto the skillet or griddle. 6. Cook the pancakes for 2-3 minutes on one side, or until the edges start to look set and the surface is covered in bubbles. 7. Flip the pancake and cook for another 1-2 minutes on the other side, until golden brown and cooked through. 8. Repeat with the remaining batter, adding more oil to the skillet or griddle as needed. 9. Serve the pancakes hot with your favorite toppings, such as maple syrup, fresh fruit, or dairy-free whipped cream.Nutrition
