Eggs Royale Recipe

- 8 poached eggs

Step 1: Make the Hollandaise Sauce
To make the hollandaise sauce, first, melt the butter in a saucepan over low heat. In a bowl, whisk together the egg yolks and lemon juice. Then, add the melted butter to the egg mixture, whisking constantly until the sauce is smooth and creamy. Season with salt and pepper to taste.Step 2: Poach the Eggs
To poach the eggs, bring a large pot of water to a boil. Add a splash of vinegar to the water. Crack each egg into a small bowl or ramekin.
