Luscious Lemon Meringue Recipe

- 3 tablespoons of cornstarch
- 1/4 teaspoon of salt
- 1/2 cup of lemon juice
- 1 tablespoon of lemon zest
- 4 egg yolks
- 1/4 cup of unsalted butter
- 1 1/2 cups of water
- 4 egg whites
- 1/4 teaspoon of cream of tartar
- 1/2 cup of sugar

Lemon Filling
1. Preheat your oven to 350°F (175°C). 2. In a medium-sized saucepan, whisk together the sugar, cornstarch, and salt. 3. Add the lemon juice, lemon zest, egg yolks, and water to the saucepan and whisk until smooth. 4. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. This should take around 10 minutes. 5. Remove the saucepan from the heat and stir in the butter until it has melted and is fully incorporated. 6. Pour the lemon filling into a pre-baked 9-inch pie crust and set aside.Meringue Topping
1. In a large bowl, beat the egg whites and cream of tartar on medium-high speed until soft peaks form. 2. Gradually add the sugar, one tablespoon at a time, while continuing to beat the mixture on high speed. 3. Continue to beat the mixture until stiff peaks form and the sugar has fully dissolved. 4. Spoon the meringue on top of the lemon filling, making sure to spread it all the way to the edges of the crust. 5. Use a spatula to create peaks and swirls in the meringue. 6.
