- 3 ripe bananas, mashed
- 1/2 cup buttermilk
Instructions
1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners. 2. In a medium-sized bowl, combine the flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl, cream the butter and sugar together until light and fluffy. 4. Add the eggs one at a time, beating well after each addition. 5. Stir in the vanilla extract and mashed bananas. 6. Gradually add the flour mixture to the banana mixture, alternating with the buttermilk. Mix until just combined. 7. Spoon the batter into the prepared cupcake tin, filling each liner about 2/3 of the way. 8. Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. 9. Remove the cupcakes from the oven and let them cool in the tin for 5 minutes. 10.
