Fish Risotto Recipe

- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 cups of chicken or vegetable broth
- 1/2 cup of white wine
- 1/2 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
1. First, prepare your ingredients. Cut the fish into small pieces, chop the onion and bell peppers, and mince the garlic. 2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent. 3. Next, add the chopped bell peppers and sauté for another 5 minutes, until they are slightly softened. 4. Add the Arborio rice to the pot and stir to coat it with the oil and vegetables. Toast the rice for a minute or two, until it turns slightly translucent. 5. Pour in the white wine and stir until it has been absorbed by the rice. 6. Add the chicken or vegetable broth, one cup at a time, stirring frequently. Allow the rice to absorb each cup of broth before adding more. 7. After about 15 minutes, add the fish to the pot and continue to stir and add broth until the rice is fully cooked and the fish is cooked through. 8. Once the risotto is fully cooked, stir in the grated Parmesan cheese and season with salt and pepper to taste. 9.
