  1. Begin by dry roasting the coriander seeds, cumin seeds, fennel seeds, black peppercorns, green cardamom pods, cinnamon stick, and cloves in a pan over medium heat. Stir continuously for 2-3 minutes until the spices are fragrant and lightly toasted.
  2. Remove from heat and let the spices cool down. Once cooled, grind them into a fine powder using a spice grinder or mortar and pestle.
  3. In a blender or food processor, add the ground spices, turmeric powder, paprika powder, and salt.
  4. Add the garlic cloves, ginger, green chilies, and chopped onion to the blender.
  5. Pulse the blender until the ingredients are well combined and form a smooth paste. You may need to add a little water to help the blending process.
  6. In a pan, heat the vegetable oil over medium heat.
  7. Add the korma paste to the pan and fry for 2-3 minutes, stirring constantly.
  8. Add 1/4 cup of water to the pan and stir well.
  9. Bring the mixture to a boil, then reduce the heat and let it simmer for 5-10 minutes until the paste thickens and the oil starts to separate from the mixture.
  10. Your homemade korma paste is now ready to be used. You can store it in an airtight container in the refrigerator for up to a week.
