- 1/4 to 1/2 cup ice water

Step 1: Mix the dry ingredients
In a large bowl, whisk together the flour, sugar, and salt until well combined.Step 2: Add the butter
Add the cold butter pieces to the flour mixture and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse sand. Some larger pieces of butter are fine.Step 3: Add the water
Add the ice water, 1 tablespoon at a time, and mix until the dough comes together. You may need to use more or less water depending on the humidity in your kitchen. Only add enough water so that the dough comes together when you press it with your fingers.Step 4: Chill the dough
Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and chill in the refrigerator for at least 1 hour, or overnight.Step 5: Roll out the dough
Remove one of the dough disks from the refrigerator and let it sit at room temperature for 5-10 minutes. On a lightly floured surface, roll out the dough into a circle that is about 1/8 inch thick.Step 6: Transfer the dough to a pie dish
Gently fold the dough in half and then in half again to make it easier to transfer to the pie dish. Place the dough in the pie dish and unfold it. Trim the edges of the dough so that there is about 1/2 inch hanging over the edge of the dish.Step 7: Add the filling
