Instructions

- Roughly chop the tomatoes, onion, ginger, and garlic.
- In a pan, heat the oil and add the cumin, coriander, and mustard seeds. Fry for a few seconds until fragrant.
- Add the chopped onion, ginger, and garlic and fry until the onion turns translucent.
- Add the chopped chillies and tomatoes and fry for a few minutes until they start to soften.
- Add salt and vinegar and stir well.
- Turn off the heat and let the mixture cool down.
- Transfer the mixture to a blender and blend until smooth.
- Transfer the chutney to a clean jar and store in the refrigerator for up to a week.
