- 1 block firm tofu, drained and cubed

Instructions
Follow these instructions to make vegan ramen:- In a large pot or Dutch oven, sauté the garlic, onion, and ginger in sesame oil until fragrant.
- Add the vegetable broth, soy sauce, miso paste, rice vinegar, and maple syrup to the pot. Bring to a boil and let simmer for 10 minutes.
- Add the cubed tofu and kale to the pot and let cook for 5-7 minutes, until the kale is wilted.
