For the cake:- 225g unsalted butter, softened
- 225g caster sugar
- 4 large eggs, beaten
- 225g self-raising flour, sifted
- 2 tsp baking powder
- 2 tbsp milk
- 1 tsp vanilla extract
- 150g unsalted butter, softened
- 300g icing sugar, sifted
- 1-2 tbsp milk
- 1 tsp vanilla extract
Instructions
1. Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line two 20cm/8in sandwich tins with baking paper. 2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. 3. Gradually add the beaten eggs, mixing well after each addition. 4. Fold in the sifted flour and baking powder until well combined. 5. Add the milk and vanilla extract and mix until smooth. 6. Divide the mixture evenly between the two prepared tins and smooth the tops with a spatula. 7. Bake in the preheated oven for 20-25 minutes or until a skewer inserted into the centre of the cakes comes out clean. 8. Remove from the oven and leave to cool in the tins for 5 minutes before transferring to a wire rack to cool completely. 9. To make the frosting, beat the softened butter in a bowl until smooth. 10. Gradually add the sifted icing sugar, mixing well after each addition. 11. Add the milk and vanilla extract and beat until the frosting is smooth and creamy. 12. Once the cakes are completely cool, spread a layer of frosting over the top of one of the cakes. 13. Place the other cake on top and spread the remaining frosting over the top and sides of the cake. 14. Decorate the cake as desired and serve.Nutrition
