Buckboard Bacon Recipe
Introduction

To make buckboard bacon, you will need the following ingredients:- 5 pounds of boneless pork shoulder
- 1 cup of kosher salt
- 1 cup of brown sugar
- 2 tablespoons of black pepper
- 2 tablespoons of paprika
- 2 tablespoons of garlic powder
- 2 tablespoons of onion powder
- 1 tablespoon of cayenne pepper
- 2 tablespoons of liquid smoke
Instructions
1. Begin by trimming the pork shoulder of any excess fat or skin.2. In a large mixing bowl, combine the kosher salt, brown sugar, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
3. Mix the dry ingredients well and then add the liquid smoke.
4. Stir until the mixture has a wet sand-like consistency.
5. Place the pork shoulder in a large container and apply the dry rub mixture on all sides.
6. Place the pork shoulder in a large resealable bag and seal it tightly.
7. Place the bag in the fridge and allow it to cure for 7-10 days.
8. After 7-10 days, remove the pork shoulder from the bag and rinse it thoroughly under cold water.
9. Pat the pork shoulder dry with paper towels.
10. Preheat your smoker to 200°F.
11. Place the pork shoulder on the smoker grates and smoke it for 4-6 hours.
12. Check the internal temperature of the pork shoulder with a meat thermometer. It should read 150°F.
13. Once the pork shoulder has reached an internal temperature of 150°F, remove it from the smoker and let it rest for 30 minutes.
14. Slice the buckboard bacon thinly and serve.
