Recipe For Lentil Stew
Ingredients:
• 2 cups of dried lentils
• 1 onion, chopped
• 2 cloves of garlic, minced
• 2 carrots, chopped
• 2 celery stalks, chopped
• 1 teaspoon of cumin
• 1 teaspoon of paprika
• 1 bay leaf
• 4 cups of vegetable broth
• Salt and pepper to taste
• 2 tablespoons of olive oil
Instructions:
1. Rinse lentils and set aside.
2. Heat olive oil in a large pot over medium-high heat. Add onion and garlic and sauté until onion is translucent, about 5 minutes.
3. Add carrots and celery and sauté for an additional 5 minutes.

6. Reduce heat to a simmer and cover with a lid.
7. Cook for 30-40 minutes or until lentils are tender.
8. Remove bay leaf and season with salt and pepper to taste.

• If you prefer a thicker stew, add less broth.
• If you prefer a thinner stew, add more broth or water.
• You can also add chopped tomatoes or tomato paste for a richer flavor.
