For the pastry:- 250g plain flour
- 50g icing sugar
- 125g unsalted butter
- 1 large egg
- 1 tablespoon cold water

- 100g sultanas
- 100g currants
- 50g mixed peel
- 1 cooking apple, peeled and grated
- 1 orange, zest and juice
- 1 lemon, zest and juice
- 50g unsalted butter
- 50g light muscovado sugar
- 1 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 50ml brandy
- 1 large egg, beaten
- 1 tablespoon granulated sugar
Instructions
Step 1: To make the pastry, combine the flour and icing sugar in a large bowl. Cut the butter into small pieces and rub it into the flour mixture until it resembles bread crumbs. Step 2: Add the egg and water to the mixture and stir until it forms a dough. Knead the dough lightly on a floured surface and wrap it in cling film. Chill in the fridge for at least 30 minutes. Step 3: To make the filling, combine all the ingredients in a large saucepan and heat gently until the butter has melted. Simmer for 10-15 minutes until the fruit has plumped up and the mixture is thick and syrupy. Remove from the heat and let it cool. Step 4: Preheat the oven to 200°C/180°C fan/gas mark 6. Roll out the pastry on a floured surface to about 3mm thickness. Cut out circles using a 9cm cutter and place them in a greased muffin tin. Step 5: Fill each pastry case with a spoonful of the cooled mincemeat mixture. Roll out the remaining pastry and cut out circles for the lids. Place the lids on top of the filling and press the edges together to seal. Step 6: Brush the beaten egg over the top of each pie and sprinkle with granulated sugar. Cut a small slit in the top of the lid to allow steam to escape. Step 7: Bake in the preheated oven for 15-20 minutes until the pastry is golden brown.
