  3. Take the hog casings and rinse them thoroughly under running water. Then soak them in a bowl of warm water for about 30 minutes to soften them up.
  4. Next, take a handful of the meat mixture and stuff it into the hog casing. Tie off the end of the casing with a knot and continue stuffing the rest of the meat mixture into the casing, making sure to not overstuff it.
  5. Once all the meat mixture is stuffed into the casings, twist the casings to form individual sausages. You can also use a sausage stuffer to make the process easier.
  6. Finally, hang the sausages to dry for a few hours or overnight. This will allow the flavors to fully develop and for the sausages to dry out a bit.
  7. Once the sausages are dry, you can either store them in the refrigerator or freeze them for later use.
