Instructions

1. Preheat your oven to 170°C/325°F/Gas Mark 3. Grease and line a 23cm/9in springform cake tin. 2. Crush the digestive biscuits into fine crumbs. Melt the butter in a pan and then stir in the biscuit crumbs. 3. Press the biscuit mixture into the bottom of the prepared cake tin, using the back of a spoon to smooth it out. Bake for 10 minutes, then remove from the oven and set aside to cool. 4. In a large mixing bowl, beat the cream cheese until smooth. Add the caster sugar, eggs, Baileys Irish Cream, and vanilla extract, and beat again until everything is well combined. 5. Pour the cheesecake mixture over the biscuit base, then smooth it out with a spatula. Bake for 1 hour, or until the cheesecake is set but still slightly wobbly in the middle. 6. Remove from the oven and leave to cool completely in the tin. Once cooled, transfer the cheesecake to the fridge and chill for at least 4 hours, or preferably overnight. 7. To make the topping, heat the double cream in a small pan over a low heat until it starts to simmer. Remove from the heat and add the dark chocolate, stirring until the chocolate has melted and the mixture is smooth. Stir in the Baileys Irish Cream. 8. Pour the chocolate topping over the cheesecake, using a spatula to smooth it out. Chill for another hour, or until the topping is set. 9. To serve, remove the cheesecake from the tin and decorate with chocolate curls.
