- 100g unsalted butter
- 600g cream cheese
- 150g caster sugar
- 200g Aero mint chocolate
- 4 eggs
- 300ml double cream

Instructions
Step 1: Crush the Biscuits
Take the digestive biscuits and crush them into small crumbs using a rolling pin or a food processor. Melt the butter in a saucepan and add the biscuit crumbs. Mix well and press the mixture into the bottom of a 9-inch springform cake tin. Put the tin in the fridge to chill for at least 30 minutes.Step 2: Prepare the Filling
Preheat the oven to 160°C. In a large mixing bowl, beat the cream cheese and caster sugar together until smooth. Melt the Aero mint chocolate in a heatproof bowl over a pan of simmering water.
