- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
Instructions
1. In a small bowl, whisk together the white vinegar, ketchup, brown sugar, and soy sauce until well combined. Set aside. 2. In a separate bowl, whisk together the cornstarch and cold water until smooth. Set aside. 3. Heat the vegetable oil in a large skillet or wok over high heat. 4. Add the sliced chicken to the skillet and season with salt and pepper. Cook for 5-6 minutes or until browned on all sides. 5. Add the sliced bell peppers, onion, and minced garlic to the skillet. Stir-fry for an additional 3-4 minutes or until the vegetables are tender. 6. Add the pineapple chunks to the skillet and stir to combine. 7. Pour the sweet and sour sauce over the stir-fry and stir to coat the meat and vegetables. 8. Reduce the heat to medium and let the sauce simmer for 2-3 minutes or until it has thickened. 9. Add the cornstarch mixture to the skillet and stir to combine. Cook for an additional 1-2 minutes or until the sauce has thickened even more. 10.
