- 1 cup of snow peas
- 1/4 cup of soy sauce
- 2 tablespoons of brown sugar
- 1 tablespoon of rice vinegar
- 1/2 teaspoon of red pepper flakes
- 1/4 cup of chopped peanuts (optional)
- Lime wedges (optional)
Instructions
Follow these simple steps to make Thai noodles:- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the garlic and stir-fry for 30 seconds.
- Add the red bell pepper, carrot, and onion. Stir-fry for 2-3 minutes or until the vegetables are tender-crisp.
- Add the broccoli, baby corn, and snow peas. Stir-fry for an additional 2-3 minutes.
- In a small bowl, mix together the soy sauce, brown sugar, rice vinegar, and red pepper flakes. Add this mixture to the wok or skillet and stir-fry for 1-2 minutes or until the sauce thickens.
- Add the cooked rice noodles to the wok or skillet and toss to coat with the sauce and vegetables.
- Garnish with chopped peanuts and lime wedges, if desired.
