1. Preheat the oven to 375°F (190°C). 2. In a large bowl, whisk together the flour and salt for the crust. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. 3. Add the ice water and stir until the dough comes together. Form it into a ball and flatten it into a disc. Wrap it in plastic and refrigerate for at least 30 minutes. 4. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, and zucchini and cook until softened, about 5 minutes. Add the spinach and cook until wilted, about 1 minute. Remove from heat and let cool slightly. 5. In a separate bowl, whisk together the eggs, milk, salt, and black pepper for the filling. 6. Roll out the chilled dough on a lightly floured surface and transfer it to a 9-inch pie dish.
