- 1 red bell pepper, diced

- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1 lime, cut into wedges
- Sour cream and salsa, for serving (optional)
Instructions
1. Preheat the oven to 375°F (190°C). 2. In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and bell pepper and cook for 5 minutes, or until the vegetables are softened. 3. Add the drained and rinsed black beans, cumin, chili powder, garlic powder, salt, and black pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes, or until the beans are heated through. 4. To assemble the burritos, place a flour tortilla on a flat surface. Spoon a quarter of the black bean and vegetable mixture onto the center of the tortilla. Top with a tablespoon of shredded cheese and a tablespoon of chopped cilantro. 5. Fold the sides of the tortilla in toward the center, then roll the burrito up tightly from the bottom. 6. Repeat with the remaining tortillas and filling. 7. Place the burritos seam-side down on a baking sheet. Bake for 12-15 minutes, or until the cheese is melted and the tortillas are golden brown. 8.
