For the chicken:- 4 skinless, boneless chicken breasts
- 2 tbsp olive oil
- Salt and pepper
- 150g mayonnaise
- 150g Greek yogurt
- 2 tbsp mango chutney
- 2 tsp curry powder
- 1 tsp turmeric
- 1 lemon, juiced
- Salt and pepper
- 150g mixed salad leaves
- 50g raisins
- 50g flaked almonds
Instructions
1. Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6.2. Brush the chicken breasts with olive oil and season with salt and pepper.
3. Place the chicken breasts on a baking tray and roast in the preheated oven for 20-25 minutes, or until cooked through.
4. Remove the chicken from the oven and allow to cool.
5. Cut the chicken into bite-sized pieces and set aside.
6. In a large bowl, mix together the mayonnaise, Greek yogurt, mango chutney, curry powder, turmeric, and lemon juice.
7. Season with salt and pepper to taste.
8. Add the chicken pieces to the bowl and stir until coated in the sauce.
9. Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavours to develop.
10. To make the salad, place the mixed salad leaves in a bowl and sprinkle over the raisins and flaked almonds.
11. Serve the coronation chicken on top of the salad.
