Vegan Cupcake Recipe
Introduction
Cupcakes are a classic dessert loved by many. However, some people may not be able to enjoy them due to dietary restrictions. Fear not, because these vegan cupcakes are just as delicious and easy to make!Ingredients
For the cupcakes:- 1 and 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsweetened almond milk
- 1/2 cup vegan butter, softened
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 1/4 cup unsweetened applesauce
- 1/2 cup vegan butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp unsweetened almond milk
Instructions
1. Preheat your oven to 350°F (175°C). 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. 3. In a separate large bowl, use a hand mixer to cream together the vegan butter and sugar until light and fluffy. 4. Mix in the vanilla extract and applesauce until well combined. 5. Gradually mix in the dry ingredients and almond milk, alternating between the two until all ingredients are well combined. 6. Line a muffin tin with cupcake liners. 7. Pour the batter into the liners, filling each about 2/3 full. 8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. 9. Allow the cupcakes to cool completely before frosting. For the frosting: 1. In a large bowl, use a hand mixer to cream together the vegan butter and powdered sugar until smooth. 2. Mix in the vanilla extract and almond milk until well combined. 3. Transfer the frosting to a piping bag and pipe onto the cooled cupcakes. 4. Optional: decorate with sprinkles or other toppings of your choice.Nutrition
