Delicious Vegetarian Risotto Recipe

- 1/2 cup grated Parmesan cheese

Instructions
1. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and garlic and sauté for 2-3 minutes until soft. 2. Add the Arborio rice to the saucepan and stir to coat with the oil. Cook for 1-2 minutes until the rice begins to turn translucent. 3. Pour in the white wine and stir until it is absorbed by the rice. 4. Add the diced zucchini and red bell pepper to the saucepan and stir to combine. 5. Begin adding the vegetable broth to the saucepan, one ladleful at a time. Stir constantly until the broth is absorbed by the rice before adding the next ladleful. Continue to do this until all the broth has been added and the rice is cooked through. 6. Add the frozen peas to the saucepan and stir to combine. Cook for an additional 2-3 minutes until the peas are heated through. 7. Remove the saucepan from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. 8.
