Recipe Of Spicy Chicken Curry
Introduction

To make spicy chicken curry, you will need the following ingredients:- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 3 tomatoes, chopped
- 2 green chillies, chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- 2 tbsp oil
- Salt, to taste
- Water
Instructions
Step 1: Marinate the chicken
In a large bowl, add the chicken pieces and sprinkle salt, turmeric powder and red chilli powder. Mix everything well and let it sit for at least 30 minutes.Step 2: Roast the spices
In a pan, dry roast the cumin seeds and coriander seeds until fragrant. Once done, grind them into a fine powder using a mortar and pestle or a spice grinder.Step 3: Cook the onions
In a large pot or a kadhai, heat oil over medium heat. Add the chopped onions and sauté until they turn golden brown.Step 4: Add the ginger and garlic
Next, add the minced garlic and grated ginger and cook for a couple of minutes until the raw smell disappears.Step 5: Add the tomatoes and green chillies
Add the chopped tomatoes and green chillies and cook until they turn soft and mushy.Step 6: Add the spices
Add the roasted cumin and coriander powder, turmeric powder, red chilli powder and garam masala. Mix everything well and cook for a minute or two.Step 7: Add the chicken
Add the marinated chicken to the pot and mix everything well. Cook for a few minutes until the chicken turns slightly brown.Step 8: Add water and salt
Add enough water to cover the chicken pieces and salt to taste. Mix everything well and bring it to a boil.Step 9: Simmer
Lower the heat and let the curry simmer for 20-25 minutes or until the chicken is cooked through and the gravy has thickened.Step 10: Serve
