- 1 carrot, grated
- 1 celery stick, finely chopped

- 1 tablespoon of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary

Follow these steps to create your vegan nut roast:- Preheat your oven to 350°F (180°C).
- Toast the nuts in a dry frying pan until golden brown, then roughly chop them and set them aside.
- Heat the olive oil in a frying pan over medium heat. Add the onion and garlic and cook until soft and fragrant.
- Add the carrot, celery, and red pepper to the frying pan and cook for a few minutes until softened.
- Stir in the tomato paste, soy sauce or tamari, thyme, rosemary, salt, and pepper, and cook for another 2-3 minutes.
- In a large bowl, mix together the chopped nuts, breadcrumbs, and flax eggs.
- Add the cooked vegetable mixture to the bowl and mix everything together until well combined.
- Press the mixture into a lined loaf tin and smooth the top with a spoon.
- Bake in the oven for 45-50 minutes, or until the top is golden brown and the nut roast is cooked through.
