Ingredients

For the crust:

  • 200g digestive biscuits
  • 100g Maltesers
  • 120g unsalted butter (melted)

For the filling:

  • 600g cream cheese (room temperature)
  • 200ml heavy cream
  • 150g granulated sugar
  • 3 eggs (room temperature)
  • 1 tsp vanilla extract
  • 150g Maltesers (chopped)

For the topping:

  • 100g chocolate chips
  • 50ml heavy cream
  • 50g Maltesers (chopped)

Instructions

Step 1: Making the Crust

Preheat your oven to 160°C/320°F. Grease a 9-inch springform pan with butter and set it aside. Crush the digestive biscuits and Maltesers in a food processor until they turn into fine crumbs. Add the melted butter and mix well until everything is well combined.

Transfer the mixture to the prepared pan and press down evenly using a spatula or the back of a spoon. Bake the crust for 10 minutes and then remove it from the oven. Let it cool completely before adding the filling.

Step 2: Making the Filling

In a large mixing bowl, beat the cream cheese until it’s smooth and creamy. Add the sugar and vanilla extract, and beat again until everything is well combined. Add the eggs, one by one, and beat well after each addition. Finally, add the heavy cream and chopped Maltesers and mix until everything is well incorporated.

Pour the filling over the cooled crust and bake for 50-60 minutes or until the edges are set, and the center is slightly jiggly. Remove the cheesecake from the oven and let it cool at room temperature for 30 minutes. Then, transfer it to the fridge and chill for at least 4 hours or overnight.

Step 3: Making the Topping

In a small saucepan, heat the heavy cream over low heat until it starts to simmer. Remove from heat and add the chocolate chips. Stir until the chocolate chips are completely melted and the mixture is smooth.

Pour the chocolate mixture over the chilled cheesecake and spread it evenly using a spatula. Sprinkle the chopped Maltesers on top of the chocolate layer. Chill the cheesecake again for at least 30 minutes before serving.
