Malteser Millionaire Shortbread Recipe

For the shortbread:- 225g plain flour
- 175g unsalted butter, softened
- 75g caster sugar
- 150g unsalted butter
- 397g can condensed milk
- 100g golden syrup
- 200g milk chocolate, broken into pieces
- 100g Maltesers

Step 1: Make the Shortbread
Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Grease a 20cm square baking tin and line with baking paper. In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy. Sift in the plain flour and mix until a soft dough forms. Press the dough into the prepared tin and prick all over with a fork. Bake for 20-25 minutes, or until golden brown. Set aside to cool.Step 2: Make the Caramel
In a medium-sized saucepan, melt the butter, condensed milk, and golden syrup over a low heat, stirring constantly. Once fully melted, increase the heat and bring to a boil. Reduce the heat and continue to stir for 5-10 minutes, or until the mixture has thickened and turned a caramel colour. Pour the caramel over the cooled shortbread and smooth with a spatula. Leave to set for 30 minutes.Step 3: Add the Topping
Melt the milk chocolate in a heatproof bowl set over a pan of simmering water. Once fully melted, pour the chocolate over the caramel layer and spread evenly. Before the chocolate sets, scatter the Maltesers over the top, pressing them gently into the chocolate. Leave to set for at least 1 hour before cutting into squares and serving.Nutrition
