Step 9: Rack the Wine

After 7-10 days, the wine will have stopped fermenting and there will be a layer of sediment at the bottom of the container. Carefully siphon the wine into a new container, leaving the sediment behind. This process is called racking.

Step 10: Wait

After racking the wine, cover the container and let it sit for another 4-6 weeks. During this time, the wine will continue to age and clarify.

Step 11: Rack Again

After 4-6 weeks, rack the wine again to remove any remaining sediment.
