- 2 aubergines, sliced

Instructions
1. Preheat your oven to 180°C/160°C Fan/Gas 4. 2. Heat some oil in a large frying pan and fry the aubergine slices until golden brown. Set aside. 3. In the same pan, fry the onions and garlic until soft. 4. Add the minced lamb and cook until browned. 5. Add the tomato puree and stir well. 6. Pour in the chopped tomatoes and add the cinnamon and oregano. 7. Season with salt and pepper to taste. 8. Simmer for 20-30 minutes until the sauce has thickened. 9. In a separate pan, melt the butter and add the flour, stirring continuously. 10. Gradually pour in the milk, whisking constantly, until the sauce is smooth and thick. 11. Add the parmesan cheese and stir well. 12. Arrange the aubergine slices in the bottom of a large baking dish. 13. Spoon the lamb mixture on top of the aubergines. 14. Pour the cheese sauce over the top of the lamb mixture. 15. Bake in the oven for 30-40 minutes until the top is golden brown and bubbling. 16. Serve hot with a side salad or crusty bread.Nutrition
