Vegan Recipe Sweet Potato

- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- 1/2 tsp. chili powder
- 1/2 tsp. sea salt
- 2 tbsp. olive oil
- 1 tbsp. fresh lime juice
- 1 tbsp. fresh cilantro, chopped
Instructions
1. Preheat the oven to 400°F. 2. Pierce the sweet potatoes several times with a fork, then place them on a baking sheet lined with parchment paper. 3. Bake the sweet potatoes for 45-50 minutes, or until they are tender. 4. While the sweet potatoes are baking, prepare the filling. In a large skillet, heat the olive oil over medium heat. 5. Add the diced red bell pepper, jalapeno pepper, and red onion to the skillet. Cook for 5-7 minutes, or until the vegetables are tender. 6. Add the minced garlic, ground cumin, smoked paprika, chili powder, and sea salt to the skillet. Cook for an additional 1-2 minutes, or until the spices are fragrant. 7.
