Beef Pot Roast Recipe

- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste

Instructions
Here are the steps to make the beef pot roast:- Season the beef chuck roast with salt and pepper on all sides.
- Heat a large skillet over medium-high heat and add olive oil.
- Place the roast in the skillet and cook for 3-4 minutes on each side until browned.
- Remove the roast from the skillet and place it in a slow cooker.
- Add the chopped onions, carrots, and potatoes to the slow cooker.
- In a small bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, garlic, thyme, rosemary, and bay leaf.
- Pour the mixture over the roast and vegetables in the slow cooker.
- Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours.
- Once cooked, remove the bay leaf and discard.
- Use a slotted spoon to remove the roast and vegetables from the slow cooker and place them on a serving platter.
- Let the roast rest for 10 minutes before slicing it.
- Serve the sliced roast with the vegetables and gravy from the slow cooker.
