Lamb Hotpot Recipe

- 2 onions, diced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and sliced
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 2 tablespoons of all-purpose flour
- 2 cups of beef broth
- 2 bay leaves
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
1. Preheat your oven to 350°F. 2. Heat the olive oil and butter in a large oven-safe pot over medium heat. 3. Add the lamb to the pot and cook until browned on all sides. 4. Remove the lamb from the pot and set aside. 5. Add the onions and carrots to the pot and cook until the onions are translucent. 6. Add the flour to the pot and stir until the vegetables are coated. 7. Add the beef broth, bay leaves, and thyme to the pot. 8. Stir the mixture and bring it to a simmer. 9. Add the lamb back to the pot and stir to combine. 10. Arrange the sliced potatoes on top of the lamb mixture. 11. Cover the pot with a lid and place it in the oven. 12. Bake for 1 hour, then remove the lid and bake for an additional 30 minutes or until the potatoes are golden brown. 13.
