The following ingredients are needed for this gluten-free scone recipe:- 2 cups gluten-free flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1/2 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries, raisins or chocolate chips (optional)
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper. 2. In a large mixing bowl, combine the gluten-free flour, sugar, baking powder and salt. 3. Add the chilled and cubed butter to the dry ingredients and mix them together with a pastry cutter or your fingers until the mixture looks like coarse sand. 4. In a separate bowl, whisk together the milk, egg and vanilla extract. 5. Slowly pour the wet ingredients into the dry ingredients, mixing together until a dough forms. 6. Add in the dried cranberries, raisins or chocolate chips (if using) and mix them in until they are evenly distributed throughout the dough. 7. Place the dough onto a floured surface and shape it into a circle, about 8 inches in diameter. 8. Cut the circle into 8 triangles and place them onto the prepared baking tray, leaving some space between each scone. 9. Bake the scones for 15-20 minutes or until they are golden brown on top. 10. Remove the scones from the oven and let them cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.Nutrition

Tips and Variations
- You can use any type of gluten-free flour for this recipe, but we recommend using a blend that includes both rice flour and potato starch for the best texture.
- If you don't have unsalted butter, you can use salted butter instead, just reduce the amount of salt in the recipe accordingly.
- For a sweeter scone, you can increase the amount of sugar to 1/3 cup.
- If you don't have dried cranberries, raisins or chocolate chips, you can substitute them with any other dried fruit or nuts that you have on hand.
- If you want to make these scones ahead of time, you can freeze them after they've cooled completely. Just wrap them tightly in plastic wrap or aluminum foil and store them in the freezer for up to 3 months. To reheat, simply thaw them at room temperature and then warm them up in the oven or microwave.
