Instructions
Step 1: Prepare the Eggplant
Preheat your oven to 400°F. Slice the eggplants lengthwise into 1/4 inch slices. Place them on a baking sheet and brush them with olive oil. Season them with salt and pepper. Roast in the oven for 20 minutes or until they are tender and slightly browned.Step 2: Prepare the Meat Sauce
While the eggplant is roasting, heat up two tablespoons of olive oil in a large skillet over medium-high heat. Add the onions and cook for 2-3 minutes until they are translucent. Add the minced garlic and stir for another minute. Add the ground beef and cook until browned. Add the can of crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper to taste. Stir the mixture and let it simmer for 10 minutes.Step 3: Prepare the Béchamel Sauce
In a saucepan, melt four tablespoons of butter over medium heat. Add four tablespoons of flour and whisk until smooth. Slowly pour in three cups of milk while whisking constantly. Keep whisking until the mixture thickens. Remove the saucepan from the heat and add one beaten egg. Whisk vigorously to combine.Step 4: Assemble the Moussaka
Spread a thin layer of the meat sauce on the bottom of a 9x13 inch baking dish. Arrange a layer of roasted eggplant slices on top of the meat sauce. Repeat the layering process until you reach the top of the baking dish. Pour the béchamel sauce over the top of the moussaka. Sprinkle one cup of breadcrumbs and one cup of grated Parmesan cheese over the top.Step 5: Bake the Moussaka
Bake the moussaka in the preheated oven at 350°F for 45-50 minutes or until the top is golden brown and the filling is hot and bubbly.Nutrition
