2 medium-sized eggplants, sliced lengthwise

Instructions
Step 1: Prepare the Eggplant
Preheat your oven to 400°F. Slice the eggplants lengthwise into 1/4 inch slices. Place them on a baking sheet and brush them with olive oil. Season them with salt and pepper. Roast in the oven for 20 minutes or until they are tender and slightly browned.
Step 2: Prepare the Meat Sauce
While the eggplant is roasting, heat up two tablespoons of olive oil in a large skillet over medium-high heat. Add the onions and cook for 2-3 minutes until they are translucent. Add the minced garlic and stir for another minute. Add the ground beef and cook until browned. Add the can of crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper to taste. In a saucepan, melt four tablespoons of butter over medium heat. Add four tablespoons of flour and whisk until smooth. Slowly pour in three cups of milk while whisking constantly.
