Introduction

Pork pie is a classic British dish that has been enjoyed for centuries. It is a savory pie that is typically eaten cold and is perfect as a snack or as part of a picnic spread. The pie is made with a hot water crust pastry and filled with seasoned pork meat. It is a delicious and hearty dish that is easy to make at home.

Ingredients

  • 500g pork shoulder, diced
  • 200g pork belly, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp salt
  • 1 tsp black pepper
  • 300g plain flour
  • 150g lard
  • 150ml water
  • 1 egg, beaten

For the jelly:

  • 500ml chicken stock
  • 1 leaf of gelatine

Instructions

Step 1: Make the Filling

In a large bowl, mix together the diced pork, onion, garlic, thyme, sage, salt, and black pepper. Make sure everything is well combined.

Step 2: Make the Pastry

In a medium saucepan, melt the lard and water together over medium heat. Once melted, add the flour and stir until a dough forms. Remove from heat and let cool for a few minutes.

Step 3: Assemble the Pie

Preheat your oven to 200°C. Roll out two-thirds of the pastry on a floured surface and use it to line a 20cm springform cake tin. Add the pork filling to the tin and press it down firmly. Roll out the remaining pastry to form the top of the pie. Use a knife to make a small hole in the center of the pastry lid. Brush the beaten egg over the top of the pie. Bake the pie for 30 minutes, then reduce the oven temperature to 180°C and continue baking for an additional 60 minutes.

Step 4: Make the Jelly

While the pie is baking, make the jelly. Soak the gelatine leaf in cold water for 5 minutes. In a small saucepan, heat the chicken stock until it comes to a boil. Remove from heat and stir in the soaked gelatine leaf until dissolved.

Step 5: Finish the Pie

Once the pie is finished baking, remove it from the oven and let it cool for 10 minutes. Pour the jelly into the hole in the center of the pastry lid until it reaches the top of the filling. Let the pie cool completely, then chill in the fridge for at least 2 hours.
