Instructions

Step 1: Boil the Potatoes

Wash and peel the potatoes. Cut them into medium-sized pieces and boil them in a pressure cooker for 2-3 whistles. Once done, let them cool down and then mash them using a masher.

Step 2: Prepare the Vada Filling

Heat 2 tbsp oil in a pan. Add mustard seeds and let them splutter. Next, add cumin seeds, turmeric powder, red chili powder, ginger-garlic paste, and salt. Mix well and sauté for a minute. Add the mashed potatoes and mix well. Cook for 2-3 minutes and then turn off the heat.

Step 3: Prepare the Batter

In a mixing bowl, add gram flour, turmeric powder, red chili powder, and salt. Mix well. Add water little by little and whisk until you get a smooth batter without any lumps.

Step 4: Make the Vada

Heat oil for frying in a deep pan. Take a small portion of the potato mixture and shape it into a ball. Dip it in the batter and coat it well. Fry the Vada in hot oil until golden brown. Remove from the oil and place them on a paper towel to remove excess oil.

Step 5: Assemble the Vada Pav

Slit the Pav bread lengthwise. Apply green chutney on one side and tamarind chutney on the other. Place the Vada in the center and press it lightly. Serve hot with more chutneys on the side.
