Simple Paella Recipe

Here are the ingredients needed for this simple paella recipe:- 500g chicken thighs, cut into small pieces
- 500g prawns, peeled and deveined
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tsp sweet paprika
- 1 tsp smoked paprika
- 1 tsp turmeric
- 2 cups of short-grain rice
- 4 cups of chicken stock
- 1 can of diced tomatoes
- 1 cup of frozen peas
- Salt and pepper to taste
- Olive oil
- Lemon wedges for serving
Instructions
1. Heat the olive oil in a large paella pan over medium-high heat. 2. Add the chicken and cook for about 5 minutes until browned. Remove from the pan and set aside. 3. In the same pan, add the prawns and cook until pink. Remove from the pan and set aside. 4. Add the onion and garlic to the pan and sauté until translucent. 5. Add the red and green bell peppers and sauté for about 5 minutes until softened. 6. Add the sweet and smoked paprika, turmeric, and rice to the pan, stirring to coat the rice in the spices. 7. Add the chicken stock and diced tomatoes to the pan and bring to a boil. 8. Reduce the heat to low and let the rice simmer for about 20-25 minutes until the liquid has been absorbed and the rice is cooked. 9. Add the peas, chicken, and prawns back to the pan and stir everything together. 10. Let the dish cook for another 5 minutes until everything is heated through. 11. Season with salt and pepper to taste. 12. Serve with lemon wedges on the side.Nutrition
