Velveeta Beef Enchiladas

For the enchiladas, you will need:- 1 pound ground beef
- 1 onion, chopped
- 1 can (10 ounces) enchilada sauce
- 1 can (10 ounces) diced tomatoes and green chilies, drained
- 1 package (16 ounces) Velveeta cheese, cubed
- 10 flour tortillas (8 inches)
- 1/4 cup chopped fresh cilantro
Instructions
1. Preheat the oven to 375 degrees F. 2. In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat. 3. Add the enchilada sauce and diced tomatoes and green chilies to the skillet. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes. 4. Add the cubed Velveeta cheese to the skillet and stir until the cheese is melted and the mixture is smooth. 5. Warm the tortillas in the microwave or oven. Spoon the beef mixture onto each tortilla and roll up tightly. 6. Place the enchiladas seam-side down in a 9x13 inch baking dish. 7. Pour any remaining beef mixture over the top of the enchiladas. 8. Bake for 15-20 minutes or until the enchiladas are heated through and the cheese is melted and bubbly. 9. Sprinkle with chopped cilantro before serving.Nutrition
