Here are the ingredients you will need to make Mary Berry's sponge cake:- 225g caster sugar
- 225g self-raising flour
- 225g unsalted butter, softened
- 4 eggs
- 2 tsp baking powder
- 2 tbsp milk
Instructions
Now that you have all of your ingredients, it's time to get started on making the cake. Step 1: Preheat your oven to 180°C/160°C fan/gas mark 4. Step 2: Grease two 20cm cake tins with butter and line the bottoms with baking paper. Step 3: In a large mixing bowl, add the caster sugar and softened butter. Use an electric mixer to beat them together until they are light and fluffy. Step 4: Add the eggs, one at a time, to the mixture while continuing to beat it. Be sure to add a little bit of the flour with each egg to prevent the mixture from curdling. Step 5: Sift the self-raising flour and baking powder into the bowl and gently fold it into the mixture using a spatula. Step 6: Add the milk to the mixture and stir until it is fully incorporated. Step 7: Divide the mixture evenly between the two cake tins and smooth the tops with a spatula. Step 8: Bake the cakes in the preheated oven for 20-25 minutes, or until they are golden brown and a skewer inserted into the center of each cake comes out clean. Step 9: Remove the cakes from the oven and allow them to cool in their tins for 5 minutes before turning them out onto wire racks to cool completely.Nutrition
