Couscous Recipe Salad

- 1 cup of couscous
- 1 ½ cups of water
- 1 can of chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 large cucumber, diced
- 1 cup of cherry tomatoes, halved
- 1/2 cup of fresh parsley, chopped
- 1/2 cup of fresh mint, chopped
- 1/4 cup of extra-virgin olive oil
- 1/4 cup of freshly squeezed lemon juice
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Place the couscous in a large bowl and pour in the boiling water. Cover and let sit for 10 minutes until the couscous has absorbed all the water.
- Fluff the couscous with a fork and let cool for a few minutes.
- Add the chickpeas, diced bell peppers, red onion, cucumber, cherry tomatoes, parsley, and mint to the couscous and stir to combine.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, salt, and black pepper.
