Instructions
1. Preheat the oven to 170°C (325°F) Gas 3. 2. Grease and line two 20cm (8in) cake tins. 3. In a large bowl, mix together the flour, sugar, cinnamon, bicarbonate of soda, and salt. 4. In a separate bowl, beat the eggs together. 5. Add the sunflower oil and vanilla extract to the eggs and mix well. 6. Pour the wet ingredients into the dry ingredients and mix until well combined. 7. Fold in the grated carrots and chopped walnuts. 8. Divide the mixture evenly between the two cake tins. 9. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center of the cake comes out clean. 10. Remove the cakes from the oven and allow them to cool in the tins for 5 minutes. 11. Turn the cakes out onto a wire rack to cool completely.Nutrition
