Cassoulet Recipe: A Hearty French Classic
Introduction
Cassoulet is a classic French dish that hails from the Languedoc region of France. It is a hearty stew made with white beans, sausage, and meat, cooked slowly in a tomato-based sauce until it is thick and creamy. To make cassoulet, you will need the following ingredients:- 2 cups of white beans
- 1 pound of pork shoulder, cut into cubes
- 1 pound of lamb shoulder, cut into cubes
- 1 pound of sausage, cut into pieces
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 cups of chicken broth
- 1 can of diced tomatoes
- 2 tablespoons of tomato paste
- 1 tablespoon of thyme
- 1 tablespoon of rosemary
- Salt and pepper to taste
Instructions
1. Soak the white beans in water overnight. Drain and rinse the beans. 2. Preheat the oven to 325°F. 3. In a large Dutch oven, cook the sausage over medium heat until it is browned. Remove the sausage from the pot and set it aside. 4. Add the pork and lamb to the pot and cook until it is browned. Remove the meat from the pot and set it aside. 5. Add the onion and garlic to the pot and cook until the onion is softened. 6. Add the chicken broth, diced tomatoes, tomato paste, thyme, rosemary, and salt and pepper to the pot. Stir well. 7. Add the white beans to the pot and stir well. 8. Add the sausage, pork, and lamb back to the pot and stir well. 9. Cover the pot and place it in the oven. Cook for 2-3 hours, stirring occasionally, until the beans are tender and the sauce is thick. 10. Remove the pot from the oven and let it cool for a few minutes before serving.Nutrition
