Recipe For Frangipane Tarts

- 1 egg yolk
- 2 tbsp ice water
- 1/2 cup almond flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1/2 tsp almond extract
For the glaze:
- 1/4 cup apricot jam
- 1 tbsp water
Instructions
For the crust:
1. In a large mixing bowl, combine the flour, sugar, and salt. 2. Add the chilled butter and use a pastry cutter or two knives to cut the butter into the flour mixture until it resembles coarse crumbs. 3. Add the egg yolk and ice water, and mix until the dough comes together. 4. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes. 5. Preheat your oven to 375°F (190°C). 6. Roll out the dough on a floured surface to about 1/8 inch thickness. 7. Cut the dough into circles using a cookie cutter or a cup. 8. Press the circles into a muffin tin, making sure to press the dough up the sides. 9. Prick the bottoms of the crusts with a fork. 10. Bake the crusts for 10-12 minutes or until lightly golden brown. 11. Let the crusts cool in the muffin tin for a few minutes before removing them to a wire rack to cool completely.For the frangipane filling:
1. In a mixing bowl, cream the butter and sugar until light and fluffy. 2. Add the almond flour, egg, and almond extract, and mix until well combined. 3.
