Instructions

Place the pluck in a large pot, cover it with cold water, and bring it to a boil. Reduce the heat and simmer for 2 hours until the pluck is tender.

Making the Haggis

Once the pluck is cooked, remove it from the pot and allow it to cool. Finely chop the heart and lungs and grate the liver. In a large mixing bowl, combine the chopped organs with the lamb or beef mince, steel-cut oats, beef suet, chopped onion, salt, pepper, thyme, rosemary, and nutmeg. Mix well until all the ingredients are evenly distributed. Preheat your oven to 180°C. Grease a large baking dish with butter or oil.
